Healthy Three-Berry Oat Scones

Too many people view eating healthy as a death sentence. We tend to see the negative side of eating healthy (like eliminating our "comfort foods" or favorites) instead of seeing the cornucopia of positive sides.

I've started to eliminate certain foods from my diet and try out new recipes to help make myself healthier. As much as I hate to admit it, I do have quite the sweet tooth and absolutely love baking. Here is a recipe for a delicious--BUT HEALTHY--dessert that can help feed your sweet tooth, but not set your diet back.

My all-time favorite sweet are berry scones, but I can tell that the scones I get from my favorite bakery are loaded with fats and sugars. Here's my own recipe for healthier three-berry scones!

Healthy Three-Berry Oat Scones
makes 6-8 scones

1 1/2 cups whole wheat flour
1 1/4 cup old-fashioned oatmeal
1/4 cup chia seeds
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon lemon zest
1/2 cup unsalted butter, melted
1/3 cup skim milk
2 egg whites, beaten to blend
1/3 cup fresh blueberries
1/3 cup fresh raspberries
1/3 cup fresh blackberries

Preheat oven to 425°F. Line a cookie sheet with parchment paper. Combine first 7 ingredients in a bowl. Mix together butter, milk and egg whites in another bowl. Add wet to dry ingredients and stir until just moistened. Mix in all three berries. Scoop 1/2 cup balls of dough and place on cookie sheet a few inches apart. Bake until light brown, about 15 minutes. Cool slightly on rack.

If you want the scones to be a little sweeter, add in a few white chocolate chips!
